Chicken & Black Bean Stir-fry

You know those times when you have had a long day or you just don't feel like fussing over anything too fancy? Well, this recipe is perfect for that! It is quick and easy!


2 Tbsp olive oil

A pack of chicken tenders or 3 chicken breasts chopped into chunks

1/2 tsp paprika, 1/2 tsp cumin

1/2 broccoli head chopped into florets

1/3 cauliflower head chopped into florets

1/2 zucchini

1 can of black beans

2 garlic cloves




Salt & pepper to taste


Heat olive oil in a pan then add the chopped chicken.

Season the chicken with paprika, cumin, salt and pepper, and stir.

Add the minced garlic and the herbs.

When chicken is cooked through (about 8 minutes) add the black beans and corn.

Pair with basmati rice, salad, or eat it by itself! Top with cheese for an extra treat!
