This is the perfect healthy, and nutritious dip to pair with your favorite crackers, chips or vegetables! It can also be used as a topping on your eggs for breakfast, or dinner such as my chicken and black bean stir fry recipe!
1 chopped avocado
2 tablespoons of freshly squeezed lemon juice
2 garlic cloves
1 small red onion
1/3 cup coriander
1/3 cup chives
1/3 cup parsley
Salt & pepper to taste
Mix all ingredients together in a mixing bowl. Mash with a fork so that the avocado has a creamier texture.
Cover and refrigerate for an hour, to allow the flavors to intensify together!
