GLUTEN FREE LEMON SQUARES

These lemon squares are the perfect guilt free dessert! They taste better made with a whole lot of LOVE! ;)


Ingredients for the crust:

1 1/2 cups of Almond Flour

3 Tbsp Coconut Oil

2 Tbsp Maple Syrup or Honey

1/2 Tsp of pink or sea salt


Ingredients for the filling:

4 Large Eggs

1/4 cup Coconut Oil

1/3 cup Honey

3 Lemons (1/4 cup + zest)

Topping:

1/4 cup coconut flakes or icing sugar





Method:


CRUST:

Add the almond flour, coconut oil, maple syrup/honey to a bowl and mix to form a soft dough. Press dough into a lined 8x8 dish with parchment paper. Bake in the oven at 350 degrees for 15 minutes, or until golden brown.

FILLING:

Add the eggs to a mixer and whisk for a few minutes until frothy. Add the coconut oil and the honey. Stop whisking and fold in the freshly squeezed lemon juice and zest. Add to your cooled crust that came out the oven. Bake in the oven for 25 minutes or shake the dish and if it is not jiggling, it is ready!

Let cool, then sprinkle with icing sugar or shredded coconut flakes.
